Preparation method
Bring plenty of salted water to a boil in a large pot. Cook the whole wheat penne in it for about 14–15 minutes until al dente. Then drain.
While the pasta is cooking, peel the carrots and cut them into thin slices. Halve the cherry tomatoes and olives. Cut the smoked salmon into bite-sized pieces.
Heat a large pot over medium heat. Sauté the carrot slices in it for about 3 minutes (add a splash of water if needed). Add tomatoes, olives, dill, salt, and pepper. Pour in the vegetable broth, reduce the heat, and let everything simmer for about 5–6 minutes.
Chef's tip
For an even creamier sauce, you can add a spoonful of the pasta water to the yogurt mixture. Make sure to add the yogurt only after turning off the heat to prevent it from curdling.
