- 50 g fresh basil
- 2 cloves garlic
- 100 ml extra virgin olive oil
- 70 g Parmigiano Reggiano DOP
- 30 g Pecorino cheese
- 1 pinch table salt

Carefully clean the basil leaves with a cloth (do not wash to preserve the aroma). Peel the garlic and finely grate the Parmigiano Reggiano and Pecorino.

Place all prepared ingredients together with the olive oil and a pinch of salt in a blender. Blend everything until a smooth, creamy pesto consistency is achieved. Serve immediately or transfer to a jar and cover with a little olive oil.
Chef's tip
For an even more intense aroma, you can briefly toast the pine nuts (optional) in a dry pan until golden brown before blending.
