- 200 g of Wheat Flour Type 405
- 300 ml of Whole Milk 3.5% Fat
- 2 pieces of Eggs
- 50 g of Butter (room temperature)
- 400 g of Fresh Leaf Spinach
- 250 g of Mushrooms
- 150 g of Roquefort Cheese
- 2 pieces of Garlic Cloves
- 1 piece of Onion
- 1 pinch of Ground Nutmeg
- 1 pinch of Salt
- 1 pinch of Pepper
- 2 sprigs of Fresh Thyme
Preparation of the Pancakes

Mix flour, milk, and eggs into a smooth batter and let it rest for about 15 minutes. In a pan with a little butter, bake 8 thin pancakes one after another.
Preparation of the Filling and Serving

Finely chop the onion and garlic and sauté in butter. Slice the mushrooms and fry them along. Add the spinach and let it wilt. Season with salt, pepper, and nutmeg. Crumble the Roquefort and mix it into the warm filling. Fill the pancakes with the mixture, roll them up, and serve garnished with fresh thyme.
