Preparation method

Cook the jasmine rice in salted water according to package instructions. Meanwhile, clean the shiitake mushrooms and cut them into bite-sized pieces.

Wash the pak choi and halve or quarter it lengthwise. Finely chop the garlic, ginger, and chili pepper (deseeded, if desired).

Heat sesame oil in a pan or wok. Briefly sauté the garlic, ginger, and chili until fragrant. Add the shiitake mushrooms and sear for about 3 minutes. Then add the pak choi.

Chef's tip

For a vegan version, you can simply replace the fish sauce with a light soy sauce.
