Preheat the oven to 180 degrees top/bottom heat. Wash the Hokkaido pumpkin, deseed it, and cut it into small cubes. Drizzle the cubes with 2 tbsp sunflower oil on a baking sheet and sprinkle with nutmeg, cinnamon, cardamom, and a pinch of salt. Mix everything well and bake in the oven for approx. 20 minutes until the pumpkin is soft.
Meanwhile, grease a quiche dish. Place the first quiche dough into the dish and gently pull up the edges.
Peel the red onion, cut it into half rings, and fry until golden brown in the remaining oil. Let cool. Finely mash or blend the baked pumpkin, then mix with the onions, eggs, and crumbled feta. Stir in the ground rosemary. Spread the pumpkin mixture evenly over the dough base.
Chef's tip
Serve the pie warm with a dollop of sour cream or a fresh green salad. A sharp knife helps to precisely cut the faces from the dough!
