Wash the vegetables thoroughly. Core the bell peppers and cut them, along with the zucchini and red onions, into roughly equal-sized, bite-sized pieces. Leave the cherry tomatoes whole. Thread everything alternately onto grilling skewers.
For the marinade, mix the olive oil with the lemon juice in a small bowl. Peel the garlic and press it in. Finely chop the fresh herbs and stir them into the oil along with salt and pepper.
Generously brush the vegetable skewers with the marinade. Grill on a hot grill over medium heat for about 10-15 minutes, until the vegetables are al dente and show slight roasted aromas. Turn the skewers regularly and occasionally brush with the remaining marinade.
Chef's tip
Soak wooden skewers in cold water for about 30 minutes before use to prevent them from burning on the grill.
For additional variety, you can also thread mushrooms, corn on the cob pieces, or halloumi cubes onto the skewers.
