  • 700 g sweet potato
  • 2 tbsp rapeseed oil
  • 2 tbsp cornstarch
  • Zest of 1 lime
  • 1 tbsp sweet paprika powder

    Preheat the oven to 215–220 °C and line a baking sheet (approx. 30 cm × 40 cm) with parchment paper.

    Wash and peel the sweet potatoes, then cut them into slices about 2 cm thick. Subsequently, cut these into sticks (fries) 1.5–2 cm wide.

    In a bowl, mix the fries with 2 tablespoons of oil, cornstarch, lime zest, and paprika powder. Season with salt and pepper to taste. Spread the fries evenly on the prepared baking sheet.

    Bake in the preheated oven at 215–220 °C for 25–30 minutes. Halfway through, turn the fries once so they become evenly crispy.

    Remove the finished sweet potato fries from the oven and serve immediately. Before enjoying, drizzle with a little fresh lime juice, if desired.
Tip
For maximum crispiness, make sure the fries do not overlap on the baking sheet. Each fry needs space to breathe!
