Preparation method
Bring 1 liter of water with 5 g of sugar to a boil in a small pot. Add the frozen peas, bring to a boil again, and cook for about 2 minutes.
Drain the peas, reserving 80 ml of the cooking water, and transfer to a blender.
Add the cooked peas, the remaining sugar (5 g), and all other ingredients (tahini, olive oil, lemon juice, and salt) to the blender. Blend everything for about 2 minutes until a completely smooth puree is formed.
Chef's tip
Before serving, garnish the puree with a few whole peas and a few drops of high-quality olive oil for an appealing look.
A powerful blender ensures the best consistency. If the puree is too thick, add a spoonful of cooking water at a time.
