Preparation method

Heat a pan with one tablespoon of olive oil over medium heat.

Add the finely diced onion to the pan and sauté until translucent for about 2 minutes. Meanwhile, cut the oyster mushrooms and button mushrooms into bite-sized pieces. Once the onions are soft, add the mushrooms and fry for another 3–4 minutes over medium heat.

Rinse and drain the chickpeas. Add them to the fried mushrooms along with the chopped tomatoes, finely sliced apricots, cumin, salt, and pepper. Reduce the heat, cover, and let everything simmer for 8–10 minutes. Meanwhile, prepare the couscous according to package instructions.
