Ein schnelles, vegetarisches Feierabendgericht aus der Pfanne: Knusprig gebratener Halloumi trifft auf saftige Zucchini, süße Kirschtomaten und feines Olivenöl mit Oregano und Zitrone. Perfekt für einen leichten Sommertag und in unter 20 Minuten servierbereit!

Pat the Halloumi cheese dry and cut into approx. 1 cm thick slices or bite-sized cubes. Wash the zucchini, cut in half, and slice. Wash and halve the cherry tomatoes. Peel and finely chop the garlic.
Instructions
Heat one tablespoon of olive oil in a large skillet over medium-high heat. Fry the Halloumi in it for about 2–3 minutes on each side until golden brown and crispy. Remove from the skillet and set aside.
Add the remaining olive oil to the same skillet. Add the zucchini and garlic and sear for about 4 minutes until the zucchini starts to brown slightly. Add the cherry tomatoes and dried oregano and sauté for another 2–3 minutes until the tomatoes begin to burst.
Chef's tip
For extra freshness, scatter a few fresh basil or mint leaves over the skillet just before serving.
Tastes excellent on its own as a light low-carb dish, or served with crusty rustic bread to dip into the warm olive oil and tomato juices.
