Baked Sweet Potatoes with Kale and Feta

Preparation method

Wash the sweet potatoes thoroughly under warm water and pat dry. Prick each potato several times with a fork and place on a baking sheet lined with parchment paper. Bake in a preheated oven at 200 °C for approx. 45 minutes, until soft.

Meanwhile, cut the kale into small pieces and crumble the feta with a fork. Place both in a large bowl and mix with 2 tablespoons of olive oil.

Remove the cooked sweet potatoes from the oven and slice them lengthwise on top. Carefully scoop out the flesh with a spoon, leaving a small border on the skin. Add the flesh to the feta-kale mixture, season with salt and pepper, and mix everything well.
