Preparation & Marinating
Peel and finely chop the garlic. Squeeze the lime. In a bowl, mix the chicken meat with 1 tbsp olive oil, 2 tbsp of the Piri Piri spice blend, the lime juice, and one-third of the chopped garlic. Let the meat marinate briefly.
Meanwhile, prepare the vegetables: Peel the onion and the remaining garlic. Cut the onion into strips, finely chop the garlic. Core and dice the bell pepper. Halve the zucchini lengthwise and cut into half-moons. Also dice the tomatoes. Cook the wholegrain rice according to package instructions in salted water.
Frying & Cooking
Heat 2 tbsp olive oil in a large pan. Sauté the onion, remaining garlic, zucchini, bell pepper, and, if desired, the finely sliced chili pepper over medium heat for approx. 5–6 minutes. Add the tomatoes, the rest of the spice blend, and 50 ml water. Cover and let simmer over low heat for another 5 minutes.
Chef's tip
For an even more intense spiciness, you can include the seeds of the chili pepper. If you prefer it milder, simply omit the chili.
