Cook the jasmine rice in lightly salted water according to the package instructions for about 12–15 minutes until tender, then keep warm.
Pat the chicken breast fillet dry and cut into strips about 1 cm thick. Wash the green beans, trim the ends, and cut diagonally into pieces about 3–4 cm long. Peel and finely chop the garlic and ginger. Cut the chili pepper into thin rings. Wash the lime with hot water and cut into wedges.
For the wok sauce, mix the fish sauce and brown cane sugar with 2 tablespoons of water in a small bowl until the sugar has largely dissolved.
Chef's tip
Crisp vegetables: Do not fry the green beans for too long. They should still have a bite and retain their bright green colour.
Spice level: Red curry paste already brings a pleasant heat. If you prefer it milder, remove the seeds from the fresh chili pepper or reduce the amount.
