Pat the turkey breast dry, cut into 4 thin cutlets, and gently pound flat between sheets of cling film. Season both sides with salt and freshly ground black pepper.

Slice the goat cheese log. Wash and quarter 2 fresh figs (set the remaining 2 figs aside for the sauce). Top each turkey cutlet with goat cheese and fig quarters, sprinkle with a little fresh thyme, roll up tightly, and secure with toothpicks.

Frying & Glazing

Heat olive oil in a large pan over medium heat. Sear the turkey involtini all over for about 6–8 minutes until golden brown. Finely chop the garlic and sauté briefly alongside.

Chef's tip

Fresh Greek flatbread or a crisp salad pairs perfectly with this, ideal for soaking up the delicious thyme and honey sauce.
