Cook the mie noodles briefly in plenty of boiling water according to package instructions (approx. 3–4 minutes), drain, rinse with cold water, and drain well.
Pat the chicken breast fillet dry and cut into bite-sized strips. Shred or finely slice the white cabbage. Peel the carrot and cut into thin matchsticks (julienne). Wash the spring onions and cut into approx. 3 cm long pieces, setting aside the green parts for serving. Finely chop the garlic and ginger.
For the aromatic yakisoba sauce, mix the soy sauce, oyster sauce, tomato ketchup, brown cane sugar, and sesame oil in a small bowl until the sugar has completely dissolved.
Chef's tip
For an even more intense street food touch, let the noodles dry slightly before stir-frying so they develop wonderful roasted aromas in the hot pan.
Typically in Japan, yakisoba is also often garnished with some pickled red ginger (beni shoga) or a drizzle of Japanese mayonnaise.
