Cut the cooked chicken meat (without skin and bones) into very fine cubes or shred it into fine fibers with two forks. For a particularly fine consistency, the meat can also be briefly mixed in a food processor.

Wash the celery, remove any tough fibers, and cut the stalks into very fine pieces. Finely chop the fresh chives.

Preparation & Serving

In a bowl, stir mayonnaise, sour cream, mustard, and lemon juice until smooth. Season the dressing with sea salt and pepper to taste.

Chef's tip

This spread is excellent for using up leftover roasted chicken. It tastes especially delicious on toasted sourdough bread.
