- 3 slices toast bread
- 200 g turkey breast fillet
- 2 slices bacon
- 1 free-range egg
- 30 g mayonnaise
- 1 slice sliced cheese (optional)
- 30 g large tomatoes
- 20 g iceberg lettuce head
- 15 ml olive oil (for toast and meat)
- 1 pinch Provencal herbs and chicken seasoning
- 1 pinch salt
- 1 pinch whole black pepper
Preheat the oven to 160 °C. Cut the turkey breast fillet into 2-3 evenly thick pieces. Season with salt, pepper, chicken seasoning, and herbs. In an oven-safe pan with a little olive oil, sear from both sides for 3-4 minutes until golden brown. Place the pan in the oven for about 10 minutes until the meat is cooked through. Then remove and let it rest briefly.
Meanwhile, lightly coat the toast slices with a little olive oil and toast them until golden brown in a toaster or a pan. Fry the bacon in a pan without additional fat until crispy. Slowly fry the fried egg in the rendered fat. Slice the turkey breast and tomatoes very thinly. Wash and pat dry the lettuce.
Layer the sandwich as follows: Spread mayonnaise on the first slice of toast, then layer bacon, turkey breast, and tomatoes on top. Spread some mayonnaise on the underside of the second slice of toast and place it on top. Also spread mayonnaise on the top side of the second slice, then place lettuce, tomatoes, and the fried egg on it. Spread mayonnaise on the third slice of toast and place it on top as the final layer. Halve the sandwich diagonally and serve.
