Wash the vegetables thoroughly. Peel the red onion, quarter it, and cut into fine rings. Core the pointed pepper and cut into thin strips. Quarter the cherry tomatoes and cut the spring onions into fine rings. If available, finely chop fresh thyme.

In a bowl, mix the pepper strips, onion rings, spring onions, and cherry tomatoes with 1 tablespoon of olive oil.
