Description
1 piece of cod loin (center cut) with skin.
The Atlantic cod (Gadus morhua) is one of many cod species and is found in the cold waters of the North Atlantic, the Arctic Ocean down to the North Sea/Baltic Sea. It is closely related to pollock.

Taste and preparation:
Lean, tender, and firm flesh with distinct, flaky segments. Mild, slightly salty taste.
Cod is the classic choice for fish 'n' chips (remove the skin beforehand). Fried in beer batter, the fish remains juicy and tender. The fish is also perfect for steaming, poaching, or pan-frying. If you lightly salt it 30 minutes beforehand, the segments firm up and become easier to prepare.
