In Chiang Rai, Northern Thailand, a small factory can be seen between the deep green fields in the hot sun. There, soy producers from all over the world have their soy sauce produced. They say that in addition to soybeans and brown rice, patience is the most important ingredient. The sauce matures for four months to develop the full flavour that you will soon taste.
