Preparation & Searing the lamb
Preheat the oven to 180 °C top/bottom heat. Pat the lamb dry and cut it into bite-sized cubes of approx. 3 cm. Peel and finely chop the garlic cloves.
Heat the olive oil in a large frying pan or roasting pan. Sear the lamb cubes vigorously on all sides until lightly browned. Season with dried oregano, half of the salt, and pepper, then add approx. 150 ml of water, cover, and gently braise over medium heat for about 30 minutes.
Preparing the rice & yogurt mixture
Melt the butter in a small saucepan. Stir in the wheat flour and gently sweat while stirring constantly for about 1 minute without letting it brown. Gradually stir in some cooled braising liquid from the meat (approx. 100 ml) until a smooth roux forms.
Chef's tip
Authenticity: Traditionally, Tavë Kosi is baked in a round earthenware or clay dish (tava). However, a standard ovenproof ceramic or glass dish works just as well.
Perfect crust: Make sure the yogurt has a 10% fat content. Low-fat yogurt curdles faster during baking and will not form the wonderfully juicy, golden-brown crust.
