Thoroughly wash the savoy cabbage, cut out the hard core, and cut the cabbage leaves into thin strips. Peel and finely dice the onion and garlic cloves. Drain the white beans and sweetcorn in a sieve and rinse with cold water.

Cooking & Flavoring

Heat the olive oil in a large soup pot over medium heat. Sauté the diced onion and garlic in it for about 3 minutes until translucent. Stir in the tomato paste and sweet paprika powder and toast briefly for approx. 1 minute until fragrant.

Add the savoy cabbage strips to the pot and cook, stirring constantly, for 2 to 3 minutes until wilted. Then pour in the vegetable broth, season generously with salt and ground black pepper, and bring to a boil. Reduce the heat and let the soup simmer gently, covered, over low heat for approx. 15 minutes.

Chef's tip

Traditionally, in the Black Sea region, Kara Lahana Çorbası is often served with freshly baked cornbread (Mısır Ekmeği) – crispy flatbread is also perfect for dipping.

If you prefer a creamier soup, you can lightly blend one or two ladles of the stew with an immersion blender before serving and stir it back in.
