Peel and finely dice the onion. Place half of the diced onion into a bowl together with the minced pork, egg, breadcrumbs, mustard, and a pinch of salt and pepper, and knead well.
With lightly moistened hands, shape the meat mixture into small, bite-sized meatballs. Peel the carrots and cut them into thin slices.
Cooking in the Pot
Heat 1 tbsp of clarified butter in a large braising pot or Dutch oven. Fry the meatballs all over on medium heat for about 4–5 minutes until golden brown, then remove and set aside.
Chef's tip
Refining: For an even creamier touch, you can stir 1–2 tablespoons of sour cream or cream cheese into the sauce at the end.
Meal Prep: The Viking stew can be prepared wonderfully in advance and tastes almost even more aromatic when reheated the next day.
