Preparation method

Preparation & searing

1

Cut the Bavarian Leberkäse into bite-sized cubes of approx. 1.5 cm. Peel the potatoes, carrots, and celeriac and likewise cut them into uniform cubes. Thoroughly wash the leek and cut into thin rings. Peel the onion and finely dice.

2

Heat the clarified butter in a large casserole dish. Fry the Leberkäse cubes over medium to high heat for 4–5 minutes until lightly browned all over and aromatic. Then remove with a slotted spoon and briefly set aside.

Sautéing vegetables & simmering

1

Sweat the diced onion in the remaining cooking fat until translucent. Then add the potatoes, carrots, and celeriac, and sauté for 2–3 minutes while stirring.

Chef's tip

Flavour tip: The sweet mustard gives the broth a subtle savoury-sweet depth that complements the hearty Leberkäse perfectly. If desired, serve additional sweet mustard at the table.

Side dish recommendation: Fresh Bavarian pretzels or crusty farmhouse bread go exceptionally well with this traditional one-pot dish.
