Remove any bones from the Kasseler meat and cut into bite-sized cubes (approx. 2 cm). Thoroughly wash the Hokkaido pumpkin, cut in half, deseed, and cut into approx. 2 cm cubes with the skin on. Peel the potatoes and carrots and also dice into bite-sized pieces. Thoroughly wash the leek and cut into rings. Peel and finely chop the onion.

Heat the clarified butter in a large braising pot. Sauté the diced onions until translucent. Add the diced Kasseler and sear lightly on all sides for 3-4 minutes until fragrant.

Add the potatoes and carrots to the pot and sauté for 2 minutes. Deglaze with the hot vegetable broth. Stir in the bay leaves and dried marjoram. Bring everything to a boil, then reduce the heat and simmer gently with the lid on for approx. 15 minutes.

Chef's tip

Since Hokkaido pumpkin has a tender skin, it does not need to be peeled - this saves time and adds a lovely autumnal color to the stew.

Go easy on the salt at the beginning: The smoked Kasseler already releases plenty of seasoning and salt into the broth during braising.
