Thoroughly wash the fresh ginger and cut it into thin slices (no need to peel). Clean the shiitake mushrooms and cut them in half or quarters. Wash the spring onions and slice them into thin rings, separating the white parts from the green.
Pat the chicken meat dry and cut it into bite-sized pieces.
Instructions
Gently heat the dark sesame oil in a large pot or wok over medium-low heat (do not let it get too hot so the sesame oil does not turn bitter). Add the ginger slices and gently fry for about 5 minutes until lightly browned at the edges and wonderfully aromatic.
Chef's tip
For an even more satisfying comfort-food experience, you can add a handful of cooked fine wheat noodles or glass noodles directly into the soup bowl.
Important when using sesame oil: Always heat it gently on low to medium heat so that the delicate roasted aromas are preserved and do not burn.
