Ingredients
Preparation method
Preparation
Cut the pork neck into bite-sized cubes of about 2 to 3 cm. Wash, deseed, and cut the red bell pepper into bite-sized pieces. Peel and slice the red onion into strips. Finely chop the garlic.
Searing
Heat 2 tbsp of olive oil in a deep skillet or Dutch oven. Sear the meat cubes over high heat on all sides until nicely browned.
Add the remaining olive oil (1 tbsp), add the onion strips and bell pepper pieces, and sauté for about 3–4 minutes. Stir in the garlic, paprika, and oregano, and sauté for 1 minute until wonderfully fragrant.
Chef's tip
For a fiery note, you can toast a pinch of dried chilli flakes (Boukovo) along with the garlic.
Warm flatbread, crispy pita bread, or Kritharaki pasta taste excellent served alongside to soak up the rich sauce.
