Griechische Pastitsada ist das festliche Traditionsgericht der ionischen Insel Korfu. Zarter Schweinenacken wird kräftig angebraten, mit trockenem Rotwein abgelöscht und in einer aromatischen Tomatensauce mit feinem Zimt und Lorbeer langsam geschmort. Serviert auf dampfenden Makkaroni und vollendet mit frisch geriebenem Käse und Petersilie bringt dieses Gericht mediterrane Gemütlichkeit auf den Tisch.

Preparation & searing the meat
Cut the pork neck into cubes of about 3-4 cm. Finely chop the onions and garlic cloves. Season the meat with a little salt and pepper.
Heat the olive oil in a heavy casserole dish. Sear the meat in batches over high heat until browned all over with a nice crust, then remove and set aside briefly.
Making the sauce & braising
In the same pot, sauté the onions until translucent. Add the garlic, tomato paste, and ground cinnamon, then roast while stirring for about 1 minute to allow the aromas to unfold.
Chef's tip
For an even more intense Corfiot aroma, you can add a pinch of ground cloves or allspice to the sauce.
Pastitsada tastes almost better when reheated the next day, as the spices infuse wonderfully overnight.
