Mackerel fillets from sustainable and controlled fishing. Caught by coastal fishermen in the Atlantic off the northern coast of Spain (FAO area 27.VIII.c-Bay of Biscay) with hook-and-line. Filleted by hand and preserved in extra virgin olive oil from the first cold pressing.

The mackerels are caught individually using lines to which several hooks are attached. The line fishermen lower the fishing lines directly over the shoal of mackerel. This prevents unwanted fish species or even birds or mammals from being caught. This method of catching mackerel may yield the lowest catch, but it ensures the best quality of fish.
