Ingredients
- 500 g pork belly, whole piece
- 1 tbsp sugar
- 2 tbsp fish sauce
- 1 tsp salt
- 1 pinch black pepper
- 1 bunch spring onions for garnish
- 250 g jasmine rice
Preparation
- 1Melt the sugar with a drop of water in a pan over medium heat until it caramelizes to a golden brown. Add the diced pork belly and season with fish sauce, salt, and pepper. Mix everything well and let it marinate for 30 minutes.
- 2Sear the meat in the pan for about 8 minutes until it takes on a dark color. Then add enough water to completely cover the meat. Simmer over low heat for about 1 hour until the liquid has almost completely reduced and reached a syrupy consistency.
- 3Cook the jasmine rice according to package instructions. Serve the caramelized pork belly with the rice and garnish with finely chopped spring onions.
