Preparation method
Preheat the oven to 180 °C (top/bottom heat).
Roughly dice the onions and slice the garlic thinly. Cut the pickled gherkins lengthwise into fine strips. Cut the bacon into approx. 0.5 cm cubes or strips. Cut the mushrooms into sixths or quarters depending on their size. Finely chop the capers.
Score the fat edge of the chops in several places down to the meat (prevents curling during frying). Season the meat generously on both sides with salt and pepper. Heat the oil in a pan over high heat and sear the chops one by one on all sides until golden brown – starting with the fat side. Set the seared meat aside on a plate.
Chef's tip
Instead of fresh mushrooms, you can also use canned or jarred mushrooms. If you are using capers preserved in salt, rinse them thoroughly under running water beforehand.
