Preparation method
Place the whole grain rice in a small pot, add 400 ml of water, and bring to a boil over medium heat.
Meanwhile, blend the pitted dates together with 20 g of the raisins, 100 ml of the milk, and the remaining 300 ml of water in a blender until smooth. Add the resulting liquid to the rice in the pot and simmer over low to medium heat for approx. 20–25 minutes.
Then, finely blend half of the cooked rice together with the remaining 150 ml of milk in a blender. Return the blended rice to the pot, add the ground cinnamon, and continue to simmer over low heat for 2–3 minutes, stirring constantly, until the mixture becomes nicely creamy and thick.
Chef's tip
For a vegan option, you can simply replace the skim milk with an unsweetened almond or oat drink.
