Dark smoked Bockwurst

The Bockwurst is a typical German sausage with a long history. It was originally served with bock beer. This is how it got its name. In some parts of Germany it is also known as "red sausage". It is especially popular in a bread roll or with potato salad. Either heat gently in hot water (not boiling!) or grill.
