Masterpiece

Knuspr-Küche
Traditionelles griechisch-zypriotisches Schweinefleisch geschmort in kräftigem Rotwein mit aromatischem Koriander und einem feinen Hauch Zimt. Butterzart, herbstlich und aromatisch.
Preparation method
Marinating & Preparation
Pat the pork neck dry and cut into approx. 3 cm bite-sized cubes. Peel and finely chop the garlic cloves.
In a bowl, mix the meat with 2 tsp ground coriander, 1 pinch ground cinnamon, 1 tsp fine table salt, 1 pinch black pepper, the chopped garlic, and 250 ml dry red wine. Let marinate for at least 30 minutes (or covered in the refrigerator overnight).
Searing & Braising
Lift the meat out of the marinade and drain well, making sure to reserve the red wine marinade and set it aside.
Chef's tip
Afelia develops its full flavor if the pork is marinated in red wine and coriander the day before.
For a well-rounded autumn meal, fresh farmhouse bread or a Cypriot bulgur side dish as well as a spoonful of creamy Greek yogurt complement this dish perfectly.
