Preparation method

Peel and finely chop the onion and garlic. Wash the broccoli, cut off the florets, and peel and finely chop the stem. Rinse the spinach and finely grate the cheddar.

Melt the butter in a large pot and sauté the onion and garlic until translucent. Add the flour and briefly sauté (to make a light roux).

Pour in the chicken broth and milk. Add the broccoli stems and simmer for about 10 minutes, stirring occasionally.
Chef's tip
For a vegetarian option, you can simply replace the chicken broth with vegetable broth.
Serve the soup in a hollowed-out bread loaf for a particularly rustic experience.
