Score the tomatoes crosswise, place them in a bowl, and pour boiling water over them. Let them steep for about 5 minutes, then carefully peel off the skin.

Quarter the peeled tomatoes, remove the seeds, and blend the flesh into a coarse purée in a food processor.

Peel and finely chop the shallots and garlic.

Chef's tip

For an even more intense aroma, you can briefly toast the baguette slices in the oven before serving.
