Pat the pork neck dry and cut into approx. 2–3 cm bite-sized cubes. Peel the onion and finely dice it.
Clean the white cabbage, cut out the hard core, and cut the leaves into bite-sized pieces. Peel and dice the potatoes and carrots. Wash the leek thoroughly and cut it into rings.
Cooking & braising
Heat the clarified butter in a large Schmortopf or Dutch oven. Sear the diced pork in batches until golden brown on all sides. Add the diced onion and saute briefly until translucent.
Chef's tip
Tastes best when left to infuse: Like almost every traditional German stew, this white cabbage stew tastes even more flavorful when reheated on the second day.
