Ispanak Çorbası ist der herrlich wärmende Klassiker der türkischen Küche für kühle Tage: Aromatisch gedünsteter Blattspinat und feiner Reis, samtig gebunden mit Zitronen-Joghurt-Terbiye und vollendet mit zischender Paprika-Minz-Butter.

Thoroughly wash the fresh leaf spinach, shake dry, and cut roughly into strips. Finely dice the onion and garlic cloves. Briefly rinse the long-grain rice in a fine sieve under cold water.
Heat the olive oil in a large pot. Gently sauté the diced onion and garlic over medium heat for about 3–4 minutes until translucent, without letting them brown.
Add the drained long-grain rice and sauté for about 1 minute. Then pour in the hot vegetable stock, season with salt and pepper, and bring to a boil once.
Chef's tip
To keep the yogurt velvety in the soup and prevent it from curdling, gradually tempering it with hot broth is key. Do not allow the soup to come to a rolling boil after adding the terbiye.
Serve with fresh Turkish flatbread or warm pide for dipping. If you like it even fresher, drizzle extra lemon juice directly at the table.
