- 350 g yellow onions
- 100 g bacon
- 20 g lard
- 80 g Edam cheese block

Peel the onions, cut them into fine rings, and fry them in lard until golden brown. Add the diced bacon and fry briefly until lightly crispy.

Transfer the onion-bacon mixture to a pot and pour in the chicken broth. Let everything simmer together for about 20 minutes over medium heat.

Season the soup with salt and pepper. Remove the pot from the heat and stir in the grated Edam cheese until it is slightly melted. Serve hot.
Chef's tip
For an even more intense aroma, you can caramelize the onions very slowly. If you prefer a spicier taste, you can also use a stronger cheese like mountain cheese.
