Wash and quarter the tomatoes. Wash, peel, and cut the carrots into small pieces. Pluck the thyme leaves from the sprigs. Peel and finely chop the onion and garlic. Prepare 750 ml of vegetable broth (or have water with bouillon cubes ready).
Instructions
Heat a large soup pot. Warm 2 tbsp of olive oil in it and sauté the onion, garlic, and carrots until translucent for about 5 minutes.
Add the tomato paste and thyme leaves. Sauté everything for another 2 minutes over medium heat to allow the aroma to develop.
Chef's tip
For an especially fine texture, you can strain the soup through a sieve after pureeing. A dollop of crème fraîche or a few drops of high-quality olive oil before serving perfectly rounds off the taste.
