Country of origin
Description
From the Piedmont region, Novara province.
Maturation period two months.
The cheese was named after the town of the same name near Milan. Dolce is a term in Italy for mild varieties of cheese, in contrast to piccante, the strong, sharper varieties. The small town was the gathering point for the herds of animals during the alpine pasture drive from Bergamo.
Taste: Mild, reminiscent of walnuts, slightly sweet

Since 1972, the Tölzer Kasladen has been importing exclusively handcrafted cheeses of the highest quality, in order to let them mature in their own maturing rooms until they are perfect.
All of them are high-quality, handcrafted cheeses, without chemical additives or genetic modifications, which come from carefully selected farm and village dairies, alpine dairies and monasteries, with which the Tölzer Kasladen has been working, in some cases, since its foundation.

A strictly regulated agriculture, in which animals, feed and animal husbandry are precisely controlled, forms the basis for impeccable milk and ultimately an exquisite cheese.
The Tölzer Kasladen now offers 200 types of cheese from 10 European countries.
