
Potato Stew with Chorizo Sausage

Preparation method
Peel onions and potatoes and cut into small cubes. Wash the soup greens and cut into pieces about 1 cm in size. Heat oil in a large pot to sauté onions, soup greens, and potatoes. Season with salt and pepper and deglaze with broth. Then add a bay leaf and let everything simmer for about 20 minutes.
Now roughly mash the stew and add the chorizo sausage. Then let everything simmer for another 10 minutes.
Wash and finely chop the parsley. Finally, season the stew with salt, pepper, and nutmeg, sprinkle with parsley, and serve.
Chef's tip
If you are vegetarian, you can also replace the chorizo sausage with smoked tofu. To make your smoked tofu particularly intense and flavorful, fry it until crispy in a pan with a little oil beforehand.
