Preparation method

Prepare & rest the dough

Place the wheat flour and 1 tsp salt in a large mixing bowl. Dissolve the fresh yeast together with the sugar in lukewarm water and let sit briefly until bubbles form. Pour the yeast mixture into the flour and knead everything into a smooth, elastic dough for about 8 to 10 minutes. Shape into a ball, cover, and let rise in a warm place for approx. 45 minutes until doubled in size.

Mix the spiced minced meat topping

Finely chop the onion, garlic cloves, tomatoes, and pointed pepper, or pulse briefly in a food processor to form a fine texture. Place the minced beef in a bowl and add the finely chopped vegetables, tomato paste, olive oil, sweet paprika powder, ground cumin, chili flakes, 1 tsp salt, and black pepper. Thoroughly knead everything with your hands until a spreadable, homogeneous meat paste forms.

Roll out Lahmacun paper-thin, top & bake until crispy

Thoroughly preheat the oven together with a baking sheet or pizza stone at maximum heat (preferably 250 °C top/bottom heat). Divide the risen dough into 4 equal portions. On a floured work surface, roll out each portion paper-thin (approx. 2 mm) into an oval or round shape.

Chef's tip

For an authentic street food feel, stack the freshly baked Lahmacuns briefly on top of each other after baking and cover with a clean kitchen towel – this keeps them pliable and makes them perfect for rolling up without breaking.

If you like, you can garnish the rolled Lahmacun with a bit of creamy garlic yogurt or pickled chili peppers.
