Ingredients
- 200 g Beluga lentils
- 50 g dried tomatoes
- 50 g tomatoes
- 1 red onion (approx. 50 g)
- 10 g fresh coriander
- Juice of 1 lime
- 1 pinch salt
- 1 pinch black pepper
Preparation
- 1Cook the Beluga lentils in sufficient water according to package instructions until al dente (approx. 20â30 minutes). Then drain and let cool briefly.
- 2Meanwhile, finely chop the coriander. Also finely dice the dried tomatoes. Cut the fresh tomatoes into small pieces. Peel the red onion and cut into fine half-rings.
- 3Combine the cooked lentils with the prepared ingredients in a bowl. Season the salad with the juice of a lime, salt, and pepper.
- 4Tip: If fresh coriander is not available, it can be replaced with dried oregano and a pinch of ground cumin. Other fresh herbs from the garden also go wonderfully with it.
