Peel the shallots and garlic cloves and cut them into coarse pieces. Wash the basil leaves and carefully pat them dry with kitchen paper.

Place garlic, shallots, basil, lemon juice, apple cider vinegar, and extra virgin olive oil into a blender.

Add a pinch of salt and freshly ground white pepper. Blend all ingredients until a homogeneous, bright green vinaigrette is formed.

Chef's tip

The vinaigrette pairs wonderfully with a classic tomato salad or as a dressing for a Mediterranean pasta salad. It keeps for about 3-5 days in the refrigerator.
