Preparation method

Prepare the pide dough & let it rest

Place the wheat flour into a mixing bowl and form a well in the center. Crumble in the fresh yeast and stir together with approx. 220 ml of lukewarm water and 20 ml of olive oil. Add 1 tsp of salt around the edge. Knead everything by hand or with a kitchen machine for about 8 to 10 minutes into a smooth, supple dough. Shape into a ball, cover, and let rest in a warm place for approx. 45 minutes until doubled in size.

Mix the seasoned minced meat filling

Finely chop the yellow onion, garlic cloves, pointed pepper, and tomatoes. Place the minced beef in a bowl and combine with the chopped vegetables, tomato paste, and the remaining 20 ml of olive oil. Season generously with sweet paprika powder, cumin, chili flakes, black pepper, and a little salt. Mix everything thoroughly with your hands until an even, juicy filling forms.

Shape the dough boats, top & bake

Preheat the oven to 230 °C top/bottom heat (or 210 °C fan oven) together with the baking sheet. Divide the dough into 4 equal portions on a lightly floured work surface. Roll out each portion into an elongated, oval flatbread (approx. 30–35 cm long).

Chef's tip

For an extra crispy crust, bake the pide on the lowest rack on a well-preheated baking sheet or pizza stone.

Butter on the hot crust is the secret of Turkish pide bakers – it is absorbed immediately and makes the crust incredibly aromatic.
