Cook the jasmine rice according to the package instructions (ideally prepare it the day before or let it cool down completely). Loosen the cold rice on a baking sheet or plate so the grains do not stick together. Prepare the carrot, onion, garlic, and leek as indicated.

Cooking in the wok

Wash the prawns and pat them dry. Season with a little pepper and some of the chopped garlic. Heat 1 tbsp of oil in a wok or large pan over high heat and sear the prawns for about 2–3 minutes until they are pink and firm. Remove from the pan and set aside.

Add another tbsp of oil to the pan. Whisk the eggs briefly, pour into the pan, and stir until they set into soft scrambled eggs. Remove from the pan as well and add to the prawns.

Chef's tip

For the best result, use cold rice from the day before. Fresh rice is often too moist and becomes mushy when fried.

If you do not have coconut sugar, brown cane sugar makes an excellent substitute for the caramel note.
