Preparation method
First, cook the rice: Add 300 ml water to a small pot, add the whole grain rice, put on the lid, and cook over medium heat for approx. 20–25 minutes (or according to package instructions).
Meanwhile, heat a coated pan over medium heat. Add the ground turkey and halved cherry tomatoes and season with salt, pepper, oregano, and cumin. Mix everything well and fry for approx. 10 minutes, stirring occasionally. Then turn off the heat and leave the meat mixture in the pan until the rice is ready. Slice the black olives thinly and stir them into the meat mixture along with the cooked rice.
For the salad, slice the cucumber thinly. In a bowl, mix with the crumbled feta, red onion rings, yogurt, and salt and pepper.
