Preparation of the Rice
Rinse the sushi rice thoroughly in a sieve under running water until the water runs clear. Then bring to a boil with the appropriate amount of water (see package instructions) and simmer for approx. 10 minutes over low heat.
Remove the pot from the heat and let the rice swell for approx. 10 minutes with the lid closed. In the meantime, mix rice vinegar, sugar, and a pinch of salt until the sugar has dissolved. Carefully fold the mixture into the rice and let the rice cool completely.
Filling and Rolling
Place a piece of cling film on the work surface and place a nori sheet, shiny side down, on top. Put a small portion of rice in the middle of the sheet and press it flat into a square. Layer the cucumber slices, marinated tofu, and red cabbage on top. Mix a sauce from vegan mayonnaise, sriracha, and a drop of sesame oil and pour it over the filling. Finally, spread another layer of rice on top.
