Preparation method
Thoroughly wash the sushi rice until the water runs clear. Cook according to package instructions (simmer for approx. 10 minutes), then remove from heat and let it swell, covered, for approx. 10 minutes. Meanwhile, mix rice vinegar, sugar, and a pinch of salt, fold into the cooked rice, and let it cool.
Meanwhile, slice the cucumber thinly and prepare the marinated tofu. For the sauce, whisk the vegan mayonnaise with Sriracha and sesame oil until smooth. Drain the red cabbage well.
Place a piece of cling film on the work surface and a nori sheet, shiny side down, on top. Place a portion of rice in the center and press it flat into a square shape. Layer cucumber slices, tofu, red cabbage, and the sauce on top. Finish with another layer of rice.
Chef's tip
Use a very sharp, slightly moistened knife to cleanly halve the onigirazu without tearing the nori sheet.
